NVS Visuals develops the menu and culinary experience for experiential activations the same way we develop the build — in-house, from concept through service. We operate our own restaurant and licensed commissary kitchen, which means menu development, production, prep, and health-department-compliant staging all happen under the same roof as fabrication.

That matters on a live activation. When the truck, the build, the graphics and the menu all come from one team, there is no vendor handoff to manage on site — no catering company waiting on a fabricator, no fabricator waiting on a permit someone else filed. One studio, one schedule, one point of accountability.

Most experiential shops treat food as a subcontract. We treat it as a discipline, developed to the brand, the footprint and the throughput of the activation it sits inside.

Restaurant & Licensed Commissary — the Compliance Backbone

We run an operating restaurant and a licensed commissary kitchen used for development, prep, cold storage and staging. It is the permitting and compliance layer most fabricators have to subcontract — and the reason we can take a menu from concept to a health-department-compliant service window without leaving the building.

Sampling and Service at Volume

Sampling is a throughput problem before it is a creative one. The queue has to move, the product has to hold temperature, and the thousandth serve has to look like the first.

We scope service against the number you actually need to hit rather than the number that fits comfortably. Portioning, service window width, staffing levels and restock rhythm get sized together — and they get sized before the footprint is designed, because the footprint is what those numbers dictate. A two-metre counter and a six-metre counter are different activations, and which one you need is a maths question, not a design preference.

Bring the target to the first conversation and it shapes the build. Bring it late and the build caps the number.

Custom Hot Food — Cooked and Served On Site

Hot food is the hardest format to execute at an activation, and the one most often quietly dropped from a brief.

It carries the most compliance, the most equipment, the most power draw and the tightest timing. Product has to reach the guest at temperature, within a service window, from a footprint the venue has approved, cooked by someone certified to cook it. Every one of those is a place a subcontracted vendor can fail.

Owning the kitchen and the vehicle is what makes it deliverable rather than theoretical. We develop the menu, produce at the commissary, and run service on site from our own vehicles and builds — with cooking equipment specified into the build rather than rented in on the day.

Coffee Service — Poured and Branded

Coffee is the highest-dwell format in experiential. People queue for it willingly, wait for it patiently, and photograph it before they drink it.

Espresso and cold-brew service with cold foam, foam printed with the brand mark, and branded cups. The drink itself becomes the placement — every cup handed over is a branded impression that leaves the footprint and keeps working, on a desk, in a hand, in someone’s camera roll.

Branding the drink itself. The mark goes onto the surface of the drink, not just the cup around it. Full-colour foam printing reproduces a logo, a product shot or a campaign image directly onto the foam. Stencilled marks in cocoa powder or cinnamon give a warmer, more crafted read — the same logo, hand-dusted rather than printed, which suits hospitality and premium positioning where a printed image can look too commercial. Cold foam is developed in custom flavours and colour-matched to the brand palette, so the drink carries the mark twice: once in the foam print, once in the colour underneath it.

Robotic service. For high-traffic footprints and unstaffed hours we run robotic coffee service from a branded robotic vending unit — automated preparation with no barista queue. It handles volume without a proportional increase in crew, runs consistently across a long service day, and holds attention on its own: people stop to watch a machine make their drink, and they film it. Useful where staffing is capped, where the activation runs longer than a shift, or where the throughput target is higher than a barista line can hit.

Where it fits. Coffee works in footprints and hours where a full food programme does not — a morning activation, a trade environment, an office takeover, a queue that needs holding. Lower compliance load, smaller equipment envelope, and it runs early when nothing else does.

Bar Service — Under Our Own License

NVS holds a liquor license. That is unusual for a fabrication studio, and it removes the single most common obstacle in an alcohol-led brief.

Branded cocktail service, spirits sampling and alcohol-led launches sit inside the same scope as the build, the graphics and the permits — not handed to a third-party bar vendor who arrives on the day with their own crew, their own insurance and their own reading of the brief. The bar itself is fabricated in the same shop as the rest of the activation, so it matches the environment rather than approximating it.

Requirements are venue- and jurisdiction-specific, so exact permitting is confirmed per event and per location. Raise it early — alcohol affects venue selection and lead time more than any other element of a food programme.

Custom Popsicles — Formula Through Production

Flavour and formula development, custom moulds, branded packaging, and production at volume for tours and multi-market runs. We develop the recipe to the brand — colour, flavour, shape — then produce it at the commissary and ship it to the activation.

Custom moulds mean the product itself can carry a logo, a silhouette or a product shape. It is one of the few formats where the giveaway and the brand asset are the same object.

We also produce push-pop tubes for formats that need one-handed service, and tint the product to match a specific flavour or brand colour — so a citrus launch is served in the colour of the citrus.

Froyo & Frozen Programmes

Frozen yogurt and soft-serve service, developed and produced for the activation and run from our own carts, trucks and builds.

Frozen formats draw a queue, and the queue is the point — it holds people in the space long enough for the rest of the activation to work. Long enough to read the messaging, talk to staff, scan the code, enter the thing they came to enter.

Flavours are developed to the brand rather than pulled from a supplier list. Colour, flavour and toppings are matched to the palette against the same references we use on the fabrication side, so the cup matches the build it is served from. Branded cups, sleeves and toppings are produced in-house alongside the graphics for the build.

Frozen service is also fast, which is what makes it work from small footprints. We have run frozen programmes from vehicles as compact as a branded tuk tuk — serving 2,000 portions from a footprint that fits where a food truck cannot park. Small vehicle, permitted site access, high throughput. That combination is the reason frozen gets specified for dense urban activations, festival footprints and venues with tight load-in windows.

It also survives conditions that break the rest of a food programme — heat, outdoor sites, long service days — which is exactly when a queue is hardest to hold.

Fresh Donuts — Made on site

A donut is the only pastry format that gets better when the guest can watch it being made. The fryer is not a back-of-house problem to hide — it is the attraction.

We produce fresh on the footprint wherever the venue and the power supply allow it, because a warm donut handed over thirty seconds after it came out of the oil is a different product from one delivered in a box that morning. Mini donuts are the workhorse format: a compact fryer line puts out high volume from a small footprint, and the production itself holds a queue the way an open kitchen does. Where a fryer cannot be permitted, we produce at the commissary and finish — glaze, fill, decorate — on site, which keeps the visible craft without the compliance load.

Branding happens on the glaze. Glazes are colour-matched to the brand palette, printed edible images sit directly on the finished surface, and custom cutters produce ring shapes, silhouettes and filled formats specific to a campaign. Fillings are developed and colour-matched too, so the donut reads as branded when it is bitten as well as when it is handed over.

Branded Details — Packaging, Service and Ice

The last six inches are where most food activations quietly go off-brand.

Branded cups, custom packaging, beverage service and custom ice cube shapes — the details that carry the mark all the way to the guest’s hand. These are produced in-house alongside the graphics for the build, which is the difference between packaging that matches the environment and packaging that approximates it.

That matters more than it sounds. The cup is the object that travels. It leaves the footprint, sits on a desk, appears in a photograph, gets carried down a street. It has a longer working life than the activation itself, and it is usually the element handed to whichever supplier could hit the deadline.

Served From Our Own Fleet

Most culinary vendors arrive at your activation. Ours is already the activation.

We own the vehicles the food comes out of — glass trucks, Airstreams, branded food trucks, ice cream trucks, carts and tuk tuks — and they are wrapped, fitted and finished in our own shop before they leave. Service equipment and cold storage are specified into the build rather than added on site, which is the difference between a vehicle that serves and a vehicle with a kitchen parked next to it.

It removes the most common point of failure on a food activation: the vendor whose truck does not fit the site, does not hold a permit for it, or does not look like the brand it is serving.

Multi-Market and Tour Programmes

A tour fails on consistency. Market three looks nothing like market one because a different local vendor built it, staffed it and read the brief their own way.

Product is produced at volume at the commissary and shipped ahead to each market, so what gets served in the fourth city is what got approved in the first. For multi-market runs we build a travelling core team and supplement locally — quality holds across stops without paying to fly a full crew to every market. Cold chain, storage and replenishment are planned per market as part of routing rather than solved on arrival.

Common Questions

The questions we get asked most often when a brand is deciding whether food and beverage belongs in their activation.

How many people can you serve in a day?

It depends on the product, the service format and the footprint, so we scope it against your target rather than quoting a ceiling. Throughput is set by portioning, service window width, staffing and restock rhythm — and those are decisions made before the build is designed, because the build has to be sized to the number. Tell us the target early and it shapes the footprint; tell us late and the footprint sets the ceiling.

Can you match the food itself to our brand colours?

Yes. We colour-match the product, not just the packaging around it. Popsicles, cold foam, soft serve, drinks and ice are all developed against your brand palette, and we work to the same colour references we use on the fabrication side — so the popsicle in someone’s hand reads as the same brand as the wall behind them.

Because print, packaging and food development all run in-house, we match them to each other rather than approving three separate versions from three vendors. Cups, sleeves, boxes, wrappers and the food itself get signed off together.

Can you handle dietary restrictions?

Yes, and it is built into menu development rather than bolted on. We formulate for vegan, dairy-free, gluten-free, nut-free and sugar-reduced requirements, and we can run parallel formulations so a restricted guest gets the same branded product as everyone else — not a visibly separate option.

Allergen handling, labelling and separation are managed through our licensed commissary, which is also where the compliance paperwork lives. Tell us the restrictions early and they shape the recipe; tell us late and they become a substitution.

Do you provide chefs and culinary staff?

Yes. We staff activations with licensed chefs and trained culinary and service crew, carrying the food-handler certification and permits the venue and jurisdiction require. Staffing is quoted as part of the activation rather than subcontracted out, so the people serving your product have worked with it before they arrive on site.

Both. We run a brand’s own product as a straight service programme, and we develop custom product to a brand — flavour, formula, colour, custom moulds, branded packaging. Custom development is the long-lead path; serving existing product moves considerably faster.

Can you work inside a venue with its own catering rules?

Often, but it is the first thing to check. Venues, malls, festivals and retail partners carry their own exclusivity agreements, kitchen rules and insurance requirements, and some prohibit outside food service entirely. We confirm venue requirements during scoping, since they determine whether the programme is served from our vehicle, from a built footprint, or reformatted as a packaged offer.

How far ahead do you need to start?

Formula development, custom moulds and branded packaging are the long-lead items. Simple service can be turned around quickly; a custom product developed to a brand — new flavour, custom mould, printed packaging — wants meaningful lead time, and more again if it is producing at tour volume.

Built to Sit Inside a Larger Activation

Culinary is rarely the whole job. It is usually the reason people stop, and the thing they remember — inside a build, a vehicle or a takeover that also has to be designed, fabricated, wrapped, permitted and staffed.
